in the passenger config under the weapon positions it has "passenger gun offsets" use that. to texture it, just import the gun model itself, then texture it, and then delete the gun model you imported, make sure to line up that imported gun model to the configed texture offset.

By the way, does anybody know how to make the vehicle guns actually take textures from specific places instead of taking colors from random places in the model?
When you put the passenger gun in the model, make sure to actually make the texture for the gun too. When you do, there is an option to move the texture using the coordinates in the seat. Copy the texture from the file you should have, and paste it at the location on the vehicles texture (in a white area).
